Gaëtan Citerne is the new Chef at La Table!

Ten years after its creation, La Table is opening a new chapter in its history of serving customers. From 16 September, Chef Gaëtan Citerne will be inviting guests on a culinary journey where the heritage of French gastronomy is combined with a resolutely contemporary approach.

On the plate? a cuisine of heart and sharing, with an emphasis on taste and local produce, generous and authentic dishes that celebrate seasonal produce and the depths of the French terroir.

A short menu, punctuated by a few great classics - Les Intemporels (such as sole meunière or veal Orloff with porcini mushrooms) - and enriched by seasonal creations that will evolve with each new arrival. For the more curious, the Chef will also be offering a three-course menu at lunchtime and a four-course menu in the evening.

A subtle encounter between the dining room and the kitchen

Alongside Chef Gaëtan Citerne, Aurélien Lerat, Restaurant Manager, Etienne Larigaldie, Maître d'hôtel, Thomas Notebaert and Emilie Benard, Sommeliers, orchestrate every detail of the service with care and attention to detail.

Here, gastronomy doesn't stop in the kitchen: it continues in the dining room in a genuine dialogue of complicity, with cuts at the table, precise gestures and attention to guests becoming the natural extension of the Chef's creations.

A close-knit team, combining culinary creativity and the art of service, in the service of the same art of entertaining.

About Gaetan Citerne

Originally from Arrage, Gaetan Citerne honed his skills in Alain Ducasse's brigades (Rivea, Spoon, Hostellerie de la Celle, Le 59) all over France.

He continued his career with Chef Marc Meurin at Le Meurin in Béthune and Monsieur Jean in Lille, before embarking on his own adventure by opening L'Arc in 2017. More recently, he joined the kitchens of Le Cerisier in Lille, before writing a new page at Clarance.
